Brunch with Besties

Call me a basic beach but there's nothing I love more than brunch with my girlfriends.  Over the holiday we had the yummiest brunch at AOC in LA and I highly recommend it!  Here are some fun snapshots from that day :)

Hi Everyone!

I'm back on the golden coast after an amazing trek through Europe!  My trip was to celebrate completing the Bar Exam (I have to wait until November for results.).  I traveled with my boyfriend, and we met up with friends along the way.  It was so fun but I missed you all so much and am super excited to finally share the first stop of our journey...Rome!  It was my second time there and I feel like I could return a hundred times and not be tired of it.

When we arrived it was SCORCHING hot (like 100+ degrees) and so my travel outfits were really simple and airy as a result.  My daily formula was basically easy dress + sandals.  Innovative I know ;) One day I can't wait to travel with a giant suitcase and a million looks, but since my boyfriend was hauling all our luggage, I felt guilty and I learned to pack light.  REALLY light. I packed everything in a carry on and tote bag for my entire three week trip....I don't even know how I managed.  It was a miracle I tell you!

We spent our days wandering the city and visiting all the beautiful piazzas and just enjoying the architectural gems on every street while eating TONS of gelato.  I actually have no gelato pictures because I was too busy eating it and could never remember to take one.  My favorite place in the city is Giolitti, especially for their fruit flavors.

We spent our nights eating all the pasta and pizza in sight!  My favorite affordable restaurant in the city is Da Francesco near Piazza Navona.  The carbonara with truffles is my favorite pasta in the whole world...trust me, it will change your life.  It's very rich and creamy-the sauce is made from egg yolks rather than actual cream, and they shave a crazy amount of black truffles on top...seriously it's a heavenly heart stopping plate of pasta.  Everything there is good--I also recommend the eggplant parmesan and their pizzas!

On the second day of our stay, it was rainy and humid...aka hair hell for my fragile fine hair.  I opted for a side dutch braid into a fishtail to it in check because we spent the day visiting Vatican city.  St. Peter's is seriously amazing and the Sistine Chapel is a feast for the eyes.  I'm wearing Estee Lauder Double Wear foundation which stays on no matter the weather, and Nars Audacious lipstick in Charlotte.

For sightseeing, I always keep it simple in denim and a white tee with chucks to match.  I try to not look like a super tourist but comfort is key!  I accessorized with a simple body chain under my shirt.  We spent our last night walking along the Tiber river near the Trastevere neighborhood.  It's really cool--tons of vendors set up mini eateries and bars during the summer so you can eat, drink, and shop along the river.

Macadamia Nut Crusted Mahi Mahi with Coconut Rice & Mango Salsa

Hey Fit Girls (and Guys!)

Many of us have a resolution to get healthier this year (see mine here) and in that spirit, I'd like to share with you an easy, yummy, and colorful recipe.  I hope you enjoy it!  E-mail me with any questions!

Ingredients:

For the Fish:

  • 4 Wild Caught Mahi Mahi Filets
  • 1/2 Cup Macadamia Nuts
  • 1/2 Cup Canned Coconut Milk
  • Salt, Pepper, Paprika

For the Rice:

  • 2 Cups Rice (I used Jasmine but you can use any)
  • 2.5 Cups Coconut Milk (Use the leftover can from the fish, then add Silk Unsweetened Coconut)

For the Salsa:

  • Mango, Bell Pepper, Cucumber, Tomato
  • Cilantro, Thai Chili, Salt, Pepper

Directions:

  1. Marinate the fish filets in coconut milk, salt, pepper, and paprika for at least 4 hours.  I usually toss the filets in a bowl before I leave for work or school and let it sit in the fridge until I come home to cook it for dinner!
  2. Take the fish out of the fridge and let it get to room temperature.  Meanwhile, prepare the rice.  Using a rice cooker, replace the amount of water with the coconut milk.  If you don't have a rice cooker, follow these directions here instead.  (Confession: I don't know how to make rice without my rice cooker.  You should get one, they're great!)
  3. Coarsely chop the macadamia nuts either with a food process or just smash them with whatever's available.  (Can you tell how scientific I am with my cooking?)  Don't over process otherwise you'll make macadamia nut butter. 
  4. Remove the fish from the marinade.  Place it on a baking sheet that's been lined with foil and greased with coconut oil. Sprinkle with some salt and pepper.  Press the chopped nuts on top of the filet.  Bake the fish at 375 for about 20 mins, or when it flakes easily.
  5. While the fish is baking, make your salsa.  Chop up whatever fresh veggies you have on hand (what I gave were simply suggestions) but the mango is super yummy if you have it.  Add enough chili for your taste.  (My spice tolerance is basically zero :D) 
  6. When everything's done, stack it all together and say Aloha, because you're basically having dinner in Hawaii!
